Noor: The gastrocultural reinterpretation of Al-Andalus

Cordoba chef Paco Morales is publishing a book in which he unveils the secrets of his restaurant Noor, along with 65 recipes, dozens of culinary techniques and a detailed historical contextualization of Al-Andalus gastronomy from the tenth to fourteenth centuries.

Throughout its 320 pages, this book published by Montagud Editores not only includes 65 recipes that recreate Spanish-Muslim cuisine from a completely contemporary perspective, it also provides a detailed historical contextualization of what and how people ate in that era, as well as dozens of essential cooking techniques, all photographed step by step.

Since it opened in March 2016, Paco Morales has opted to make Noor a “cultural project” rather than a restaurant, which has meant making a creative R&D space that performs major research work; in a modern way, it provides “an overview of the monumental cuisine of the Arab Cordoba.” This project, which the chef also wanted to carry out in his homeland and in his family’s neighborhood, earned him his first Michelin star months after it was opened, and a second star in November 2019, which he is celebrating with the publication of this book.
